Preheat oven to 275ยบ. Fold each washed leaf of kale in half along the stem, and tear leaves off, removing the stem. Kale should be in pieces about 2-3 inches in length and width. Distribute in one layer across two baking sheets and drizzle with olive oil. Sprinkle with salt and pepper. Toss to lightly coat in olive oil. Then top with parmesan. Leaves should not overlap.
