Last year, I had the distinct—and absurdly funny—pleasure of food styling on set with the team behind the comedy web series cooking show Meals With Mary. Mary is an 86 year-old ex-vaudevillian wild woman who can even make sexual innuendos out of kale chips.


This kale chip recipe is fast, easy, and insanely delish. Nutty parmesan caramelizes in the oven (OH SNAP did someone say Kale & Caramel???), lending a subtle sophistication to the delicate, leafy crunch of kale in chippy form.Once you get a hit of the snappy, hilarious, and legit cooking show realness that is MWM, you’re gonna be hooked. Seriously. Just check this out:

SALT & PEPPER KALE CHIPS.

Ingredients
  

  • 6 leaves large kale washed
  • olive oil to drizzle
  • sea salt to taste
  • fresh cracked pepper to taste
  • shaved parmesan to taste

Instructions
 

  • Preheat oven to 275º. Fold each washed leaf of kale in half along the stem, and tear leaves off, removing the stem. Kale should be in pieces about 2-3 inches in length and width. Distribute in one layer across two baking sheets and drizzle with olive oil. Sprinkle with salt and pepper. Toss to lightly coat in olive oil. Then top with parmesan. Leaves should not overlap.
  • Bake for 10 minutes, then flip the leaves over to ensure crispy goodness. Bake for another 10 minutes. Remove and let cool. Keep in an airtight container, lest they lose their crunch.
