HERBY NECTARINE, AVOCADO & FETA LITTLE GEM SALAD.

Ingredients
  

  • 4 cups little gem lettuce leaves trimmed, about two small-medium heads
  • ½ cup thinly sliced nectarine or stone fruit of choice
  • ½ cup thinly sliced cucumbers
  • ½ cup thinly sliced radishes
  • ½ cup loosely packed mint leaves
  • 1/3 cup dill leaves
  • 1/3 cup feta cheese
  • 2 cups lightly toasted or day-old large bread chunks
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • flaky sea salt to taste
  • freshly cracked pepper to taste
  • 1 small avocado sliced

Instructions
 

  • In a large bowl, combine little gem lettuce, nectarine, cucumbers, radishes, mint, dill, and feta cheese. Toss to combine, then add bread chunks, and toss again.
  • In a small bowl, mix olive oil and red wine vinegar with a whisk or fork. Pour over salad, and toss. Add flaky sea salt and freshly cracked pepper, to taste. Finish with avocado slices. Let sit a few minutes to allow bread to absorb liquid and flavors to marry. Enjoy.
