ROASTED STRAWBERRY ROSE ICE CREAM SODA FLOATS.

Ingredients
  

  • 1 pound fresh strawberries washed, trimmed, and halved
  • 4 tablespoons honey divided
  • 1 teaspoon rose water
  • 1/8 teaspoon ground vanilla bean or ¼ teaspoon pure vanilla extract
  • 2-3 cups sparkling water
  • 1 pint vanilla bean ice cream or ice cream of choice

Instructions
 

  • Preheat oven to 425º. Line baking sheet with parchment paper.
  • Place strawberry halves, face down, on baking sheet. Drizzle with 2 tablespoons honey, 1 teaspoon rose water, and vanilla. Roast for 30-35 minutes, rotating pan halfway through, until berries are tender and darkened, and juices are beginning to caramelize.
  • Remove from heat and transfer berries into a food processor or blender. Add remaining 2 tablespoons honey and blend into a puree. Transfer to a bowl, cover with plastic wrap and chill completely.
  • To make the soda, use a ratio of 1 part strawberry rose puree to 2 parts sparkling water (for example, 1 cup puree to 2 cups sparkling water). Stir to combine. Reserve extra puree to use at base of float glasses, and to top.
  • To assemble soda floats, dollop a few spoonfuls of puree at the base of each glass, add ice cream, pour strawberry rose soda on top, and top with an extra drizzle of puree if you wish. Serve with straws and spoons!
