A few posts back, I wrote about coming back to my body, returning to a place that was fun and open and playful and, yes, seriously booty burning. Pilates has been that for me since I was a teenager—a safe haven where I knew I wouldn’t get hurt amidst all the dance and yoga. The miraculous powers of the reformer and all its straps and handles kept my often hyper-mobile spine in check. At this juncture in my life, I have officially begun calling the reformer my boyfriend.

Lucky for me, I got to hang out this weekend with the beautiful and incredibly kind Heather Dorak, creator of Pilates Platinum. Where the reformer is my boyfriend, Pilates Platinum is that infinitely encouraging best friend always in possession of the perfect words to keep you going. Jamming music? Check. Lovely, humorous, and bad-ass instructors? Check. Bangin’ results? Check. (I mean, come back and ask me next month—pretty sure my booty is getting hella tight, but you can be the judge of that.)

For our hang, I blended up a spicy pineapple mojito green juice with a chipotle salt rim to refuel post-Pilates (and, um, YES: you can put booze in this if you’re in that kind of mood). It’s deeply nourishing, super refreshing, and—even though it’s a juice—feels substantial.

Heather and I talked about the usual: Sex, long-distance relationships, the wild stress and reward and excitement of owning our own businesses, and our undying love for the holy grail that is the Vitamix. We drew as much nourishment from our visit as we did this vibrant green juice.

Also per K&C usual, this juice is made in a blender and yields a frothy, mint-green quencher that’s as spicy as you like. The easy union of pineapple, cucumber, and mint yields smoothly to spicy salt and jalapeño. It’s everything I want after a workout. I think Heather agreed.

SPICY PINEAPPLE MOJITO GREEN JUICE.

Servings 2

Ingredients
  

  • 1 ½ cups fresh pineapple pieces no skin, no core
  • 4-5" piece of cucumber, skin on
  • 2-3" piece jalapeño pepper with seeds, depending on how spicy you like
  • 1 ¼ cups water
  • 4 ice cubes
  • 2 pinches sea salt
  • 4-5 drops stevia optional
  • 12 leaves large fresh mint

for glass rim

  • ½ teaspoon sea salt
  • ½ teaspoon chipotle powder

Instructions
 

  • Mix ½ teaspoon sea salt and ½ teaspoon chipotle powder on a small plate. Set aside.
  • Place pineapple pieces, cucumber, jalapeño, water, ice cubes, two pinches sea salt, and stevia in blender. Blend on high until completely smooth and frothy. Add mint leaves, and blend another few seconds until you see green flecks.
  • Prepare two glasses by rubbing their rims with a piece of pineapple. Dip rims in the plate of chipotle salt.
  • Fill with juice. Sip. Get chill.
